My Favorite Sunday Breakfast
Fluffy Pancakes Recipe
You know that feeling when you wake up on a Sunday morning, free from all duties, and you just wanna treat yourself with something appetizing? Well, that happens to me EVERY Sunday, and so I make these mouthwatering pancakes to fulfill my Sunday morning luxuries.
This recipe isn't my own, but I wrote it down when I was younger, which is why I don't remember who this recipe belongs to :D. I've made these pancakes 3 times; twice for myself and once for my family. This recipe makes around 8 pancakes, depending on how big or small you make them. If you want to serve a lot of people, you will have to double or even triple the recipe so that there is more batter and that will lead to more pancakes.
Some Important Notes
Now, in this recipe, you have to beat egg whites until they're fluffy. I don't really always have the power to do that in the morning, so I just whisk it until its fluffy enough with a hand whisk instead of using a beater. Anyhow, if you whisk it enough, it'll be a proper fluffy pancake. The last time I made these, I used a hand whisk, which is why the pancakes ended up like a normal, flat one. But once, when I used the beater, the pancakes were amazingly fluffy. So its fluffiness will all depend on your mood in the morning!
Next, the original recipe didn't have any measurements for the sugar, so I always add 3 tbsp. But if you think that your pancakes need to be sweeter, add as much sugar as you want.
If you don't have vinegar, no worries! You don't have to add it since I barely do it either.
So lets check out the ingredients;
Fluffy Pancakes Recipe
Ingredients
2 eggs
4 tbsp. milk
2 tbsp. oil
1 cap vanilla
6 tbsp. flour
1 cap vinegar
3 tbsp. sugar
butter/oil for greasing the pan
whatever toppings you like (e.g.; honey, berries, powdered sugar etc.)
Method
Separate the egg yolks and egg whites.
Mix the egg yolks, milk, oil and vanilla together.
Sift the flour and fold it into the wet ingredients mixture until it looks like a batter with no lumps.
In another bowl, beat the egg whites and vinegar until bubbly. Gradually add the sugar while beating until its fluffy.
Mix egg yolks batter with egg whites mixture and fold. This batter will look fluffy.
Take a nonstick frying pan and grease it. Keep it on the stove on a low flame.
Add the batter in the pan and let it cook from one side. Flip it, and keep it in your serving plate.
Once your batter has finished and all your pancakes are ready, add your toppings and serve it warm.
Voila! You just learnt how to make my favorite breakfast. I put honey in between the pancakes, and dusted some powdered sugar on top. It's a delicious recipe, so make sure you try it out.
